Guests can signup and login to their loyalty account using an Apple ID. Once this is done, the guest's email address in their loyalty account is linked with the email address in their Apple ID. If the guest chooses not to share their email with Punchh, a random email address will be generated by Apple with domain @privaterelay.appleid.com.
Because they use the "sign in using Apple ID" option when they pull up the app, the password can not be reset through the Punchh platform. If they need to reset their Apple ID password, they'll have to do it through Apple then return to your brand's mobile app.
